Wait a moment, you are talking about more than One thing 'when you refer to 'tastes' on the one hand and a 'Fetish' on the other.
Surprisingly (! !), most people who use the word 'Fetish' do so at the drop of a reason they alone know, with the complete lack of knowledge as to just what the word itself means.
A 'Fetish' is some~thing, usually an object of some kind (but it could even be a sound) which needs to be present within sexual activity ~ meaning, it is a part of this activity, or it is within sight, or ~ possibly it could be spoken / cried out etc in order that the person can reach the point of orgasm / ejaculation.
Without this 'fetish' object (underwear, material, smell, handcuffs, shoes or whatever) being there, then ejaculation / orgasm is NOT possible.
A 'Predilection' is something else, where for example, someone has a 'taste for' blondes, or enjoys the blonde dressed in black leather ~ or (again) whatever. However, this liking ~ desire of or predilection does not have to be present and is not necessary for the ejaculation / orgasm to occur.
'Taste', as you use it, is a very lose term and is nebula ....I like tall Scandinavian blondes ....while also liking Petite brunettes ...each of whom may or may not like things / activities I like ....and as such, I am flexible in 'my Tastes'.
To answer the last part of your 'question', ''Fetishes' do tend to be pretty much forever ....although, there are some people with extremely bizarre fetishes that border on and even step over the boundaries of the Obscene and Grossly Obscene ....and can be treated with varying degrees of effectiveness.
